Our goal with Dark was to highlight the emblematic flavors of Nacional cacao. We combined an early harvest with a shorter conch time, adjusted our fermentation style, and used a robust cacao percentage. The result is a strongly floral aroma that intermingles with red fruits and earthy notes on the palate.
